Easy Cleanup Shrimp Scampi Pasta

Doing dishes, even if it is loading and unloading a dishwasher, isn’t fun. If you cook a lot, you need a break and it should be something other than a fast food drive through. This dish is super easy to make and clean up after.


Ingredients (serves 4)

  • 1 pound frozen peeled and deveined medium sized shrimp

  • 2 cups chicken broth

  • 12 Oz rotini pasta

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup heavy cream

  • 6 Tbsp unsalted butter, sliced into tablespoons

  • 1/4 cup fresh parsley, chopped

  • 3 cloves of garlic, minced

  • 1/4 tsp red pepper flakes

  • 1/4 tsp lemon juice

  • dash of salt and pepper

Directions

  1. Preheat oven to 425 F.

  2. Generously coat the bottom and sides of a 9 by 13 casserole dish with butter.

  3. Dump rotini pasta in an even layer on the bottom.

  4. Scatter shrimp over it and drop in the remaining butter slices.

  5. Pour in the broth, add garlic, red pepper flakes, lemon juice, salt, and pepper.

  6. Cover with foil and bake until pasta is al dente, about 25 minutes.

  7. Meanwhile, using a small microwave safe bowl, combine the Parmesan cheese, parsley, and heavy cream. Heat for 20 seconds in microwave.

  8. When the casserole is done, turn off the oven, remove the casserole, and sprinkle the cheese and cream mixture all over it.

  9. Allow to cool some before serving.
