Keto-friendly Rising Crust Pizza Dough

I found a recipe and rewrote it, leaving out ads, photos, and unnecessary yack yack yack. Have not tried yet.
You can make keto pizza dough with yeast for a bread-like crust that rises with good dough structure and texture.
Key Ingredients
* Yeast: Active dry or instant yeast.
* Warm Liquid: 110 degree water, with just a touch of honey to feed the yeast. Stevia leaf and Monk fruit sweeteners would probably not feed the yeast - these should not be substituted for honey and are only used to sweeten sugar-free pizza sauce.
* Fats: Olive oil and melted butter
* Dry Mix: Oat fiber, vital wheat gluten, salt, xanthan gum, and optional seasonings (garlic powder, Italian herbs).
* Binder: Eggs
Basic Steps
1. Activate Yeast: Mix warm water, yeast, and honey. Let it get foamy (5-10 mins).
2. Combine Dry: Whisk oat fiber, vital wheat gluten, salt, xanthan gum, etc..
3. Mix Wet: Beat eggs, melted butter, and oil
4. Combine All: Add yeast mixture, then dry ingredients to wet, mixing until a sticky dough forms.
5. Knead: Knead in a mixer for several minutes until smooth and elastic.
6. Rise: Form a ball, oil it, cover, and let rise in a warm spot for one hour.
7. Shape and Bake: Roll between parchment paper, top, and bake at a high temperature.
Ingredients
1. 1 cup vital wheat gluten
2. 1 cup oat fiber (or 2/3 cup oat fiber and 1/3 cup ground flax meal)
3. 1/2 tsp baking powder
4. 1 package active dry yeast
5. 1 tsp honey (or sugar but honey is best)
6. 1/2 tsp xantham gum
7. 1 cup 110 degree water
8. 2 TBSP extra virgin olive oil
9. 1/2 TBSP melted butter
10. 2 beaten eggs, room temperature
11. 1/4 cup freshly shaved full fat mozzarella from a block of it
12. 1/4 cup freshly grated Parmesan
13. 1/2 cup no sugar added pizza sauce such as Rao’s Homemade
14. 1 TBSP Monk fruit or Stevia sweetener
Directions:
1. In a large bowl, combine the vital wheat gluten, oat fiber, ground flax meal, xantham gum, and baking powder.
2. In a small bowl or glass measuring cup, add the 1 cup of 110 degree water, honey, and active dry yeast. Let sit for 5 minutes. It should foam up and if not, start over with good yeast.
3. In another bowl, whisk together the eggs, salt, butter, olive oil, and shaved/grated cheese.
4. Add all the wet ingredients to the dry ingredients in the large bowl and mix thoroughly. Use of a stand mixer with dough hook attachment for about 6 minutes is best.
5. Form a big ball of dough, cover it with a towel, and let stand for 1 hour to rise.
6. Roll it out between sheets of parchment paper.
7. Proceed as you would to make any pizza. For the sauce, using a no sugar added sauce with Monk fruit or Stevia should replicate the taste of “bad old” pizza sauce. High fat proteins such as bacon and sausage? Chicken? Basil? It could be cooked at high heat on a pizza stone or in a skillet.
