This was inspired by Amato’s Real Italian Sandwich. You can buy their incomparable bread and have it shipped to you. This recipe is simplified and uses a tortilla in place of a roll for people who are really watching their carbs. It could even be a gluten-free recipe if you choose to use a gluten-free tortilla. I’ve chosen Mission Carb Balance Soft Taco Restaurant Style Flour Tortillas for this recipe (not gluten-free). Make as many of these sandwich roll ups as you’d like at one time and seal and refrigerate whatever is leftover. You won’t use all of the ingredients below just for 4 roll ups. Of course you could make more or less of them, example is for 4.
Ingredients (serves 4)
4 10-inch tortillas such as Mission Carb Balance Super Soft Restaurant Style Flour Tortillas (resealable pack of 8)
8 Oz cooked ham
8 Oz white American cheese
1 beefsteak tomato
1 large green bell pepper
1 white onion
bread and butter pickle chips (jar)
black olives (jar)
California extra virgin olive oil (pure olive oil from California is one of the few choices guaranteed to be just olive oil)
salt and pepper
Directions
Chop the onion and green pepper into small pieces no more than about 1/4 inch in any dimension, discarding onion skin and pepper seeds.
Slice the tomato into halves, quarters, eights, etc, discarding the seeds and liquid parts. Chop into pieces about the same size as the onions and peppers.
Slice up into thirds 8 black olives.
Slice up into quarters 3 pickle chips.
Place one tortilla on cutting board and lay 2 square cheese slices on top, one above the other, with some overlap if necessary. Repeat for another layer of cheese.
Add two layers of cooked ham vertically, which should be about as long and wide as the two adjoining cheese slices.
Add in the middle of the ham and cheese (along the length) some of the tomato, green pepper, onion, pickle, and black olives.
Douse liberally with olive oil and sprinkle with salt and pepper.
Roll up from left to right or right to left. Cut ends so they are squared off. Hold together with toothpicks.
Repeat the above assembly steps for the other tortillas.
Serve.
