Soft & Sweet Keto Bread

Equipment:
Stand mixer
Kitchen scale showing grams
Mixing bowls, preferably glass
Bread loaf pan, preferably glass
Hand whisk, rubber or silicone spatula
Measuring cup
Measuring spoons
Baking thermometer
Ingredients:
Part 1:
25g oat fiber
180g vital wheat gluten
40g coconut flour
55g almond flour
20g stevia or monkfruit
1 tsp baking powder
1 tsp xantham gum
Part 2:
240ml warm water (120 deg F)
1 1/2 TBSP active dry yeast
1/2 tsp sugar
Part 3:
2 large eggs
Part 4:
30g unsalted butter
1/2 tsp sea salt or kosher salt (must be uniodized salt)
Directions:
Add Part 1 dry
ingredients to the stand mixer bowl.
Attatch whisk attachment.
Wisk for 1 minute on a fairly low speed.
Replace whisk attachment with paddle attachment.
Warm up 240ml water to 120 deg F in a microwave safe bowl such as a glass measuring cup.
Add 1 1/2 TBSP of active dry yeast to the warm water and stir with something nonmetalic.
Add 1/2 tsp cane sugar. Yes, it will be sugar-free bread as the yeast will consume the sugar.
Stir again.
Let it bloom while continuing the recipe.
In another bowl, whisk together two large eggs.
In another micowave safe bowl, melt 30g of unsalted butter. Suggest using 50 percent power for 50 seconds. Keep an eye on it.
Stir in 1/2 tsp salt.
Turn on stand mixer and slowly add the bloomed yeast and water.
After about 5 minutes running on low, slowly add the eggs.
Let it run for another 3 to 4 minutes, then slowly add the melted butter and salt.
Replace paddle attachment with dough hook attachement, scraping everything off the paddle attachment and sides of bowl.
Knead with dough hook for 5 minutes.
Take out all the dough and place on a clean work surface lightly dusted with flour.
Form a ball and knead by hand for a few minutes, then form into a loaf shape.
Prepare a bread loaf pan either by lining with parchment paper or using cooking spray or butter on the bottom and sides.
Place dough evenly in loaf pan and adjust to even it out (it will expand to fill the pan if close to begin with).
Put some extra virgin olive oil on top of the dough and cover with plastic wrap.
Allow 45 minutes for the dough to rise. Preheat the oven to 350 deg F about 10 minutes before the 45 minutes is up.
Remove plastic wrap, place bread pan on middle rack in oven, and bake for 30 minutes.
Turn off oven, remove bread pan with oven mitts, and set on a wire rack to cool.
Wait 20 minutes before removing loaf from pan and slicing.
